
Dry:
•1 cup white or whole wheat flour
•1 tsp baking soda
•1 tsp cinnamon
•1/4 tsp cloves
•1/2 tsp nutmeg
•1/4 tsp salt
Wet:
•1 cup apple pulp (you can sub in shredded carrots or zucchini, but make sure to squeeze out extra liquid)
•1/2 cup active sourdough starter (if you don’t have a sourdough starter, you can use 1.5 cups flour and add additional applesauce until you get a muffin batter consistency)
•1 cup plain applesauce
•2 tbsp oil of choice (I recommend something neutral tasting rather than EVOO, could also use melted butter)
•1 tsp vanilla extract
•1 egg, beaten (sub in flax egg to make vegan)
•1/2 cup maple syrup

1. Preheat oven to 350° F.
2. Whisk together dry ingredients in a medium bowl. Set aside.
3. Mix wet ingredients together in a separate bowl.
4. Add dry ingredients to wet slowly while mixing continuously.
5. Scoop into a greased muffin tin and bake for 28-32 minutes, or until a toothpick comes out clean.
